Sweet & Smoky BBQ Bacon Cornbread Casserole
Ingredients
1 small onion, diced
1 cup BBQ sauce (your favorite)
4 strips bacon, cooked and crumbled
1 cup shredded cheddar cheese
1 box cornbread mix (plus ingredients listed on the box)
1 tablespoon honey
1 teaspoon smoked paprika
Directions
Cook the Beef: In a skillet, brown the ground beef and onion over medium heat. Drain excess grease, then stir in BBQ sauce, crumbled bacon, and smoked paprika.
Assemble the Casserole: Spread the beef mixture into a greased 9×13-inch baking dish. Sprinkle shredded cheddar cheese on top.
Prepare the Cornbread: Mix the cornbread batter according to the package. Add honey for extra sweetness, then pour it evenly over the beef mixture.
Bake: Bake at 375°F for 20-25 minutes, or until the cornbread is golden and fully set.
Serve: Slice and enjoy warm with your favorite side salad or steamed veggies.
