Sunday Comfort Pot Roast

Ingredients:
3 lb chuck roast
Salt and pepper, to taste
2 tbsp olive oil
1 large onion, chopped
4 cloves garlic, minced
4 cups beef broth
1 cup carrots, chopped
1 cup potatoes, cubed
1 cup celery, chopped
2 tbsp tomato paste
1 tbsp Worcestershire sauce
2 sprigs fresh rosemary
2 sprigs fresh thyme
Instructions:
Season Roast: Generously season the chuck roast with salt and pepper.
Sear Roast: In a large pot or Dutch oven, heat olive oil over medium-high heat. Sear roast on all sides until browned (about 4 minutes per side).
Add Aromatics: Remove roast and set aside. In the same pot, sauté onions and garlic until softened.
Add Liquids: Stir in tomato paste, Worcestershire sauce, and beef broth, scraping up any browned bits.
Combine Ingredients: Return roast to the pot, then add carrots, potatoes, celery, rosemary, and thyme.
Simmer: Cover and cook on low heat for 3-4 hours, or until roast is tender and falls apart easily.
