Strawberry Cheesecake Stuffed French Toast

Ingredients:

For the Filling:

8 oz cream cheese, softened

1/4 cup powdered sugar

1 tsp vanilla extract

1 cup diced strawberries

For the French Toast:

8 slices thick-cut bread

4 large eggs

1 cup milk

1 tsp vanilla extract

1/2 tsp ground cinnamon

Butter, for frying

For Serving:

Maple syrup

Additional diced strawberries

Optional: Powdered sugar

Directions:

In a medium bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in diced strawberries.

Spread the cream cheese mixture on 4 slices of bread and top with the remaining slices to make sandwiches.

In a shallow dish, whisk together eggs, milk, vanilla extract, and cinnamon.

Heat a skillet or griddle over medium heat and melt butter.

Dip each sandwich into the egg

mixture, coating both sides, then place in the skillet.

Cook sandwiches for 2-3 minutes per side, or until golden brown and crispy.

Serve warm with maple syrup, diced strawberries, and a dusting of powdered sugar if desired.
