Spooky Soft Christmas Cookies
INGREDIENTS:
- 1 cup whole wheat flour
- 1/2 cup coconut sugar
- 1/4 cup unsweetened applesauce
- 1/4 cup almond butter
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon sea salt
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chips (optional)
**INSTRUCTIONS:**
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a mixing bowl, combine the whole wheat flour, coconut sugar, baking soda, cinnamon, nutmeg, and sea salt.
3. In another bowl, mix together the applesauce, almond butter, and vanilla extract until smooth.
4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. If desired, fold in the dark chocolate chips for a delightful touch.
5. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
6. Bake for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
