Ingredients:

  • 8 oz orzo pasta
  • 1 tablespoon olive oil
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 4 cups baby spinach
  • Optional: grated Parmesan, salt, black pepper, red pepper flakes, lemon zest

Instructions:

  1. Cook the Orzo:
    • Bring a pot of salted water to a boil and cook the orzo according to the package instructions (usually about 8-10 minutes).
    • Drain the orzo and set aside.
  2. Sauté the Mushrooms:
    • Heat the olive oil in a large skillet over medium heat.
    • Add the sliced mushrooms and cook for 5-7 minutes, stirring occasionally, until golden and tender.
    • Season lightly with salt and pepper.
  3. Add Garlic and Spinach:
    • Reduce the heat to medium-low.
    • Stir in the minced garlic and cook for about 30 seconds, until fragrant.
    • Add the baby spinach and cook for 2-3 minutes, stirring until wilted.
  4. Combine with Orzo:
    • Add the cooked orzo to the skillet and toss everything together until well combined.
    • Taste and adjust seasoning with more salt, pepper, or red pepper flakes if desired.
  5. Optional Garnishes:
    • Sprinkle grated Parmesan over the top for extra creaminess.
    • Add a pinch of lemon zest for a bright, fresh flavor.
  6. Serve:
    • Serve warm as a comforting side dish or a light vegetarian main course.
