Spinach Mushroom Orzo
Ingredients:
- 8 oz orzo pasta
- 1 tablespoon olive oil
- 8 oz mushrooms, sliced
- 3 cloves garlic, minced
- 4 cups baby spinach
- Optional: grated Parmesan, salt, black pepper, red pepper flakes, lemon zest
Instructions:
- Cook the Orzo:
- Bring a pot of salted water to a boil and cook the orzo according to the package instructions (usually about 8-10 minutes).
- Drain the orzo and set aside.
- Sauté the Mushrooms:
- Heat the olive oil in a large skillet over medium heat.
- Add the sliced mushrooms and cook for 5-7 minutes, stirring occasionally, until golden and tender.
- Season lightly with salt and pepper.
- Add Garlic and Spinach:
- Reduce the heat to medium-low.
- Stir in the minced garlic and cook for about 30 seconds, until fragrant.
- Add the baby spinach and cook for 2-3 minutes, stirring until wilted.
- Combine with Orzo:
- Add the cooked orzo to the skillet and toss everything together until well combined.
- Taste and adjust seasoning with more salt, pepper, or red pepper flakes if desired.
- Optional Garnishes:
- Sprinkle grated Parmesan over the top for extra creaminess.
- Add a pinch of lemon zest for a bright, fresh flavor.
- Serve:
- Serve warm as a comforting side dish or a light vegetarian main course.
