Special Herb-Crusted Salmon with Lemon-Dill Sauce

Ingredients:

• For the Herb-Crusted Salmon:

o 4 salmon fillets (about 6 ounces each)

o 1/4 cup breadcrumbs (panko or regular)

o 2 tablespoons fresh parsley, chopped

o 2 tablespoons fresh dill, chopped

o 1 tablespoon fresh thyme, chopped

o 2 cloves garlic, minced

o 1/4 cup grated Parmesan cheese

o 2 tablespoons olive oil

o Salt and black pepper, to taste

• For the Lemon-Dill Sauce:

o 1/2 cup sour cream or Greek yogurt

o 1 tablespoon mayonnaise

o 1 tablespoon lemon juice

o 1 teaspoon lemon zest

o 1 tablespoon fresh dill, chopped

o Salt and black pepper, to taste

Instructions:

1. Prepare the Herb Crust:

o Preheat your oven to 400°F (200°C).

o In a mixing bowl, combine breadcrumbs, parsley, dill, thyme, minced garlic, Parmesan cheese, olive oil, salt, and black pepper. Mix well until the ingredients are combined and form a crumbly mixture.

2. Prepare the Salmon:

o Place the salmon fillets on a lined baking sheet, skin-side down. Season the top of the salmon with salt and black pepper.

o Press the herb crust mixture evenly over the top of each salmon fillet, ensuring it adheres well.

3. Bake the Salmon:

o Bake the salmon in the preheated oven for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The herb crust should be golden brown.

4. Make the Lemon-Dill Sauce:

o In a small bowl, whisk together sour cream (or Greek yogurt), mayonnaise, lemon juice, lemon zest, dill, salt, and black pepper until smooth and creamy.

5. Serve:

o Serve the herb-crusted salmon hot, drizzled with the lemon-dill sauce. Pair it with steamed vegetables or a fresh salad for a complete meal.
