Southern Goulash
INGREDIENTS:
- 1 lb (450g) lean ground turkey
- 1 cup whole wheat elbow macaroni
- 1 can (15 oz) diced tomatoes, no salt added
- 1 cup low-sodium vegetable broth
- 1 medium onion, chopped
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp dried oregano
- 1/2 tsp black pepper
- 1 cup fresh spinach, chopped
**INSTRUCTIONS:**
1. In a large pot, sauté the chopped onion, bell pepper, and minced garlic over medium heat until they become tender.
2. Add the lean ground turkey to the pot, cooking until it’s browned and fully cooked through.
3. Stir in the diced tomatoes, vegetable broth, whole wheat macaroni, paprika, oregano, and black pepper. Bring the mixture to a gentle boil.
4. Reduce the heat and let it simmer for about 15-20 minutes, or until the macaroni is cooked al dente.
5. Finally, fold in the fresh spinach and cook for an additional 2-3 minutes until wilted.
