Socca

Ingredients :

🌾

chickpea flour – 250 g

💧water – 500 ml

– cu️ olive oil – 60 ml (more for cooking)

– café salt – 1 teaspoon

🌶️ black pepper – 1/2 teaspoon

🌿 fresh rosemary – 1 tablespoon (chopped)

Instructions:

1. Prepare the dough: In a large bowl, mix chickpea flour, salt and black pepper. Gradually add water while whipping to avoid lumps. The dough must be smooth and slightly liquid. Infuse the olive oil and chopped rosemary. Let the dough rest for at least 30 minutes at room temperature.

2. Preheat the oven: While the dough is resting, preheat the oven to 220°C (428°F). Place a cooktop or cast iron skillet in the oven to heat equally.

3. Cooking the socca: Once the oven is hot, remove the plate or pan and add a little olive oil to coat it well. Pour the batter on the hot plate, spreading it evenly to form a circle about 1 cm thick.

4. Bake: Return to the oven and bake for 15 to 20 minutes, or until socca is golden and crispy around the edges. Keeping a close eye to keep it from burning.

5. Serve: Remove socca from the oven and cut it into pieces. Serve hot, sprinkle with a little extra olive oil and possibly sprinkle with fresh rosemary.

Extra tips: Socca is enjoyed very well with a green salad or as an appetizer with olives. You can also add spices like paprika or cumin to change up the flavors. Enjoy your meal! “
