Slow Cooker Black Eyed Peas

1 16oz bag dried black eyed peas
1 smoked turkey leg, wing, or neck
1/2 yellow onion chopped
1/2 red bell pepper chopped
3 celery stalks chopped
2 vegetable or chicken bouillon cubes
1 tablespoon creole seasoning (prefer Tony’s)
1/2 tablespoon fresh thyme
10 sprigs of fresh thyme
1 bay leaf
2 tablespoon olive oil for skillet
-Soak peas overnight in a bowl
-Drain and thoroughly rinse in colander
-Add black eyed peas to the crockpot.
-Heat 1 Tbsp olive oil in a deep skillet or dutch oven and sear the smoked Turkey 5 minutes, then remove and set aside
-Add another Tbsp of olive oil back to skillet and sauté garlic, onion, celery, and peppers for 5 minutes or until soft
-Add creole seasoning to skillet, stir
-Add bouillon cubes, chop in pieces with cooking utensil, stir
-Add smoked Turkey back to skillet
-Add 2 cups of water to skillet
-Stir and bring to a low boil for 5 minutes
-Add skillet ingredients to crock pot
-Add 5 cups of water to crock pot
-Add bay leaf
-Add 5 sprigs of thyme to top
-1 hour before done remove turkey, strip meat, and chop meat
-Add meat and bone back to the pot
-Add remaining 5 sprigs of thyme to top
Cook high 5-6 hours
Cook low 9-10 hours
