Slow Cooker Beef Stew

INGREDIENTS:

  • 1.5 lbs lean beef stew meat
  • 4 cups low-sodium beef broth
  • 3 medium carrots, sliced
  • 2 medium potatoes, diced
  • 1 cup green beans, trimmed and chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

**INSTRUCTIONS:**
1. In a large skillet, heat the olive oil over medium heat. Add the beef stew meat and brown it on all sides for about 5-7 minutes.
2. Transfer the browned beef to the slow cooker.
3. Add the chopped onion, minced garlic, sliced carrots, diced potatoes, and chopped green beans to the slow cooker.
4. Pour in the low-sodium beef broth and sprinkle in the dried thyme and rosemary. Season with salt and pepper according to your taste.
5. Stir everything together to combine well.
6. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the vegetables are cooked through.
7. Serve warm and enjoy your nutritious and hearty beef stew!
