Pumpkin Coffee Cake Recipe

INGREDIENTS:

  • 1 cup whole wheat flour
  • 1 cup almond flour
  • 1 cup pumpkin puree
  • 1/2 cup coconut sugar
  • 1/4 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

**INSTRUCTIONS:**
1. Preheat your oven to 350°F (175°C) and lightly grease a 9-inch round cake pan.
2. In a large bowl, combine the whole wheat flour, almond flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix well.
3. In another bowl, whisk together the pumpkin puree, coconut sugar, applesauce, almond milk, and eggs until smooth.
4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. If desired, fold in the chopped walnuts for added crunch.
5. Pour the batter into the prepared cake pan and spread it evenly.
6. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
7. Allow the cake to cool for a few minutes before slicing and serving. Enjoy your healthy pumpkin coffee cake!
