Mashed Potatoes in Muffin
Ingredients:
3 cups mashed potatoes (about 3 large potatoes)
2 eggs
1 cup shredded cheddar cheese (or cheese of choice)
2 tablespoons chopped chives (or green onions)
2 tablespoons grated Parmesan
Salt and ground black pepper, to taste
Sour cream, for serving (optional)
Additional chopped chives, for garnish (optional)
Directions:
Preheat your oven to 375°F (190°C) and grease a muffin tin.
In a large bowl, mix mashed potatoes, eggs, shredded cheddar cheese, chopped chives, Parmesan, salt, and black pepper until well combined.
Spoon the mixture evenly into the muffin tin cups.
Bake for 20-25 minutes, or until the tops are golden brown and slightly crispy.
Remove from the oven and let the muffins cool slightly before serving.
Garnish with sour cream and additional chopped chives, if desired.
Servings: 6-8
