Macaroni Salad (Filipino Style)
Ingredients:
2 cups elbow macaroni
1 cup mayonnaise (Filipino brands like Lady’s Choice preferred)
1/2 cup condensed milk
1/4 cup all-purpose cream
1/2 cup shredded cheddar cheese
1/2 cup cooked chicken, shredded
1/4 cup raisins
1/2 cup pineapple tidbits, drained
1/2 cup diced carrots, boiled until tender
1/4 cup sweet pickle relish
2 hard-boiled eggs, chopped (optional)
Salt and pepper, to taste
Directions:
Cook the Macaroni:
Bring a large pot of salted water to a boil. Add the macaroni and cook according to package instructions until al dente.
Drain, rinse under cold water, and set aside to cool completely.
Prepare the Dressing:
In a large mixing bowl, combine mayonnaise, condensed milk, all-purpose cream, and a pinch of salt and pepper. Whisk until smooth and creamy.
Assemble the Salad:
Add the cooked macaroni, shredded chicken, cheddar cheese, raisins, pineapple tidbits, carrots, and sweet pickle relish to the dressing.
Gently toss until all ingredients are well combined and evenly coated.
Optional Additions:
Fold in the chopped hard-boiled eggs, if using.
Chill and Serve:
Cover the salad and chill in the refrigerator for at least 1-2 hours before serving to let the flavors meld. Serve cold as a side dish or snack.
