Italian Sausage and Peppers Sandwiches

Ingredients:

4 Italian sausage links (mild, sweet, or spicy, as preferred)
1 tablespoon olive oil
1 large onion, thinly sliced
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
2 cloves garlic, minced
Salt and black pepper to taste
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
4 sandwich rolls or hoagie buns
Provolone or mozzarella cheese slices (optional)
Directions:

Cook the sausage: In a large skillet over medium heat, add a little olive oil if needed, then add the Italian sausage links. Cook for 8-10 minutes, turning occasionally until browned and cooked through. Remove from the skillet and set aside.

Sauté the vegetables: In the same skillet, add olive oil and then the sliced onions and bell peppers. Sauté for 5-7 minutes until softened. Add the minced garlic, salt, pepper, oregano, and basil, cooking for another 2 minutes until fragrant.

Combine and finish: Slice the cooked sausage links lengthwise (optional for easier eating) and return them to the skillet with the peppers and onions. Stir to combine and heat through for a couple of minutes.

Assemble the sandwiches: Place a sausage link in each roll, top generously with the sautéed peppers and onions, and add a slice of provolone or mozzarella cheese if desired. Place under the broiler for 1-2 minutes to melt the cheese, if desired.
