Irish Bacon, Cabbage, and Potato Soup

Ingredients
6 oz Irish bacon or thick-cut bacon, chopped
1 medium onion, diced
3 cloves garlic, minced
4 cups chicken broth
4 large potatoes, peeled and diced
2 cups cabbage, chopped
1 cup carrots, diced
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper to taste
2 tbsp chopped fresh parsley (optional)
Directions
In a large pot, cook bacon over medium heat until crispy. Remove bacon with a slotted spoon; leave drippings in the pot.
Sauté diced onion and garlic in the drippings for 3-4 minutes, until the onion is translucent.
Add chicken broth, potatoes, cabbage, and carrots. Stir in thyme and rosemary.
Bring to a boil, then reduce to a simmer. Cook for 20-25 minutes, or until potatoes and carrots are tender.
Stir in cooked bacon. Season with salt and pepper to taste. Simmer for an additional 5 minutes.
Garnish with fresh parsley if desired. Serve hot and enjoy!
