Ingredients:

1 lb (450g) carrots, peeled and cut diagonally into 1-inch pieces
2 tbsp olive oil
2 tbsp honey
1 tbsp unsalted butter, melted
1 tsp fresh thyme leaves
1/2 tsp salt
1/4 tsp black pepper
Instructions:
Prepare the Oven:

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
Mix the Glaze:

In a small bowl, whisk together olive oil, honey, melted butter, salt, and pepper.
Coat the Carrots:

Place the carrots in a large bowl. Pour the glaze over the carrots and toss until they are evenly coated.
Roast the Carrots:

Spread the carrots in a single layer on the prepared baking sheet. Roast for 20-25 minutes, stirring halfway through, until they are tender and caramelized.
Garnish and Serve:

Remove from the oven and sprinkle with fresh thyme leaves. Serve immediately for the best flavor.
