Ingredients:

1 lb ground beef (or ground turkey for a leaner option)
1 medium onion, chopped
1 bell pepper, chopped
2 cloves garlic, minced
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) pinto beans, drained and rinsed
1 can (15 oz) diced tomatoes
1 can (8 oz) tomato sauce
1 cup beef broth (or vegetable broth)
1 packet chili seasoning mix (or homemade chili seasoning)
1/2 teaspoon ground cumin
1/2 teaspoon chili powder (adjust to taste)
1/4 teaspoon paprika
Salt and black pepper, to taste
1/2 teaspoon sugar (optional, to balance acidity)
Optional Toppings:

Shredded cheddar cheese
Sour cream
Chopped green onions
Tortilla chips

Instructions:

Cook the Ground Beef:

In a large pot or Dutch oven, brown the ground beef over medium-high heat until fully cooked, breaking it apart as it cooks. Drain any excess fat if necessary.
Sauté the Vegetables:

Add the chopped onion, bell pepper, and garlic to the pot. Cook for about 5 minutes until softened and fragrant.
Add the Beans and Tomatoes:

Stir in the kidney beans, pinto beans, diced tomatoes, and tomato sauce. Mix well.
Season the Chili:

Add the beef broth, chili seasoning mix, cumin, chili powder, paprika, salt, pepper, and sugar (if using). Stir to combine. Bring the mixture to a simmer.
Simmer the Chili:

Lower the heat and let the chili simmer for 30-45 minutes, stirring occasionally, allowing the flavors to meld together. Add more broth if you prefer a thinner chili.
Adjust Seasoning:

Taste the chili and adjust the seasoning with more salt, pepper, or chili powder if needed.
Serve:

Ladle the chili into bowls and top with shredded cheddar cheese, sour cream, chopped green onions, and tortilla chips if desired.
