Healthy Strawberry Brownies 

INGREDIENTS:
– 1 box strawberry cake mix 

– 2 large eggs 

– ⅓ cup melted coconut oil or unsalted butter 

– 1 teaspoon strawberry extract (optional) 

– ¾ cup powdered sugar (for glaze) 

– 2 tablespoons strawberry preserves 

– 1½ tablespoons almond milk 

# INSTRUCTIONS:
1. Preheat your oven to 350°F (175°C). Lightly coat an 8×8-inch or 9×9-inch baking dish with nonstick spray, then line the bottom with parchment paper, allowing it to extend up the sides for easy removal later.

2. In a large mixing bowl, combine the strawberry cake mix, eggs, melted coconut oil (or butter), and strawberry extract until well blended. The mixture will be quite thick.

3. Spread the batter evenly into the prepared baking dish and bake for 18-25 minutes, or until a toothpick inserted in the center comes out clean. Keep an eye on it, as baking times may vary.

4. Once baked, remove from the oven and let cool completely on a wire rack.

5. For the glaze, whisk together the powdered sugar, strawberry preserves, and almond milk in a small bowl until smooth. Pour the glaze over the cooled brownies and spread it evenly.

6. Cut into 9 large or 12 smaller squares and enjoy your deliciously healthy strawberry brownies!
