Healthy Hawaiian Pineapple Cake 

INGREDIENTS:
– 1 (18.25 oz) box whole grain yellow cake mix

– 1 (8 oz) package low-fat cream cheese, softened

– 1 (3.4 oz) package instant vanilla pudding mix

– 1 1/2 cups cold almond milk

– 2 cups light whipped topping

– 1 cup unsweetened coconut flakes

– Chopped nuts (optional)

INSTRUCTIONS:
1. Prepare the Cake: Preheat your oven to 350°F (175°C). Lightly grease and flour a 9×13 inch baking pan. In a large mixing bowl, combine the whole grain cake mix, crushed pineapple (with juice), light vegetable oil, and eggs. Mix until everything is well blended. Pour the batter into the prepared pan.

2. Bake: Place the pan in the oven and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan.

3. Make the Frosting: In another bowl, beat the low-fat cream cheese until smooth. Add the instant pudding mix and cold almond milk, mixing until fully combined.

4. Assemble the Cake: Once the cake has cooled, poke holes in it using a fork or the handle of a wooden spoon. Pour the juice from the crushed pineapple over the cake to infuse it with flavor. Spread the cream cheese frosting evenly on top.

5. Decorate: Finish by topping the cake with light whipped topping, unsweetened coconut flakes, and chopped nuts if desired. Refrigerate until you’re ready to serve.
