Greek Chicken Meatballs with Homemade Tzatziki
Ingredients:
For the Meatballs:
1 lb ground chicken
1/4 cup breadcrumbs (panko preferred)
1/4 cup crumbled feta cheese
2 tablespoons fresh parsley, chopped
1 tablespoon fresh dill, chopped
2 cloves garlic, minced
1/2 small onion, finely grated
1 egg
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
For the Tzatziki Sauce:
1 cup Greek yogurt
1/2 cucumber, grated and excess water squeezed out
1 clove garlic, minced
1 tablespoon olive oil
1 teaspoon lemon juice
1 teaspoon fresh dill, chopped
Salt and black pepper, to taste
Directions:
Prepare the Meatballs:
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine ground chicken, breadcrumbs, feta cheese, parsley, dill, garlic, onion, egg, oregano, salt, and pepper. Mix until well combined.
Form and Bake:
Roll the mixture into 1-inch meatballs and place them on the prepared baking sheet. Bake for 18-20 minutes, or until golden and cooked through (internal temperature of 165°F/74°C).
Make the Tzatziki Sauce:
In a bowl, combine Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, dill, salt, and pepper. Stir until smooth and creamy. Refrigerate until ready to serve.
Serve:
Serve the meatballs warm with a generous drizzle of tzatziki sauce. Pair with pita bread, rice, or a fresh Greek salad for a complete meal.
