Garlic Parmesan Chicken Meatloaf


Ingredients:

1.5 lbs ground chicken

1/2 cup breadcrumbs

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese (plus extra for topping)

3 cloves garlic, minced

1 egg

1/4 cup milk

1 tbsp fresh parsley, chopped

1 tsp Italian seasoning

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions:

Preheat Oven:
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

Mix the Meatloaf:
In a large mixing bowl, combine ground chicken, breadcrumbs, Parmesan, mozzarella, garlic, egg, milk, parsley, Italian seasoning, salt, and pepper.
Gently mix the ingredients until just combined, avoiding over-mixing.

Shape and Bake:
Shape the mixture into a loaf on the prepared baking sheet or press into a loaf pan.
Bake for 35-40 minutes, or until cooked through and firm.

Add the Cheese Topping:
Remove the meatloaf from the oven and sprinkle additional shredded mozzarella on top.
Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Serve:
Let the meatloaf rest for 5 minutes before slicing.
Garnish with fresh parsley and serve with your favorite sides, such as mashed potatoes, steamed vegetables, or a fresh salad.
