Ingredients:

  • 2 ripe bananas (mashed)
  • 2 large eggs (lightly beaten)
  • 1/4 cup oats (optional for added texture)
  • 1/4 teaspoon baking powder (for fluffiness)
  • A pinch of salt (enhances flavor)
  • 1/2 teaspoon vanilla extract (optional, for aroma)
  • Butter or oil (for cooking)

Instructions:

  1. Prepare the Batter:
    • In a medium bowl, mash the ripe bananas until smooth.
    • Add the eggs, baking powder, salt, and vanilla extract (if using). Mix until well combined.
    • If desired, stir in oats for a bit of texture.
  2. Heat the Pan:
    • Preheat a non-stick skillet or griddle over medium heat.
    • Lightly grease the surface with butter or oil.
  3. Cook the Pancakes:
    • Pour small scoops of batter (about 2-3 tablespoons each) onto the skillet. Keep them small to make flipping easier.
    • Cook for 2-3 minutes until bubbles form on the surface and the edges look set.
    • Gently flip and cook the other side for an additional 1-2 minutes until golden brown.

  • The oats are optional but help add structure, making the pancakes easier to flip.
