Ingredients:
- 2 ripe bananas (mashed)
- 2 large eggs (lightly beaten)
- 1/4 cup oats (optional for added texture)

- 1/2 teaspoon vanilla extract (optional, for aroma)
- Butter or oil (for cooking)
Instructions:
- Prepare the Batter:
- In a medium bowl, mash the ripe bananas until smooth.
- Add the eggs, baking powder, salt, and vanilla extract (if using). Mix until well combined.
- If desired, stir in oats for a bit of texture.
- Heat the Pan:
- Preheat a non-stick skillet or griddle over medium heat.
- Lightly grease the surface with butter or oil.
- Cook the Pancakes:
- Pour small scoops of batter (about 2-3 tablespoons each) onto the skillet. Keep them small to make flipping easier.
- Cook for 2-3 minutes until bubbles form on the surface and the edges look set.
