Crispy Zucchini Chips with Basil Mayo

INGREDIENTS:
– 2 large zucchinis
– 1 cup breadcrumbs
– 1/2 cup grated Parmesan cheese
– 1 teaspoon garlic powder
– Salt to taste
– Pepper to taste
– 1/2 cup mayonnaise
– 1/4 cup fresh basil, chopped
– 1 tablespoon lemon juice

INSTRUCTIONS:
1. Preheat your oven to 425°F (220°C).
2. Slice the zucchinis into thin rounds.
3. In a mixing bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
4. Dip each zucchini slice into the breadcrumb mixture, ensuring both sides are well coated, then place them on a baking sheet.
5. Bake the zucchini for 20-25 minutes, or until they turn golden and crispy.
6. While the chips are baking, prepare the basil mayo by mixing the mayonnaise, chopped basil, and lemon juice in a small bowl.
7. Serve the crispy zucchini chips with the basil mayo on the side for dipping. Enjoy!
