Coconut Lime Chia Oatmeal Cake

Ingredients
2 tbsp chia seeds
½ cup shredded coconut (unsweetened)
¼ tsp salt
Zest of 1 lime + 2 tbsp lime juice
⅓ cup maple syrup (or honey)
2 large eggs (or flax eggs for vegan)
¾ cup coconut milk (or almond milk)
¼ cup melted coconut oil (or butter)
1 tsp vanilla extract
Instructions
Preheat & Prep
Preheat your oven to 350°F (175°C) and grease or line an 8×8-inch baking pan.
Mix Dry Ingredients
In a bowl, whisk together rolled oats, chia seeds, shredded coconut, baking powder, salt, and lime zest.
Mix Wet Ingredients
In another bowl, whisk together lime juice, maple syrup, eggs, coconut milk, melted coconut oil, and vanilla extract until smooth.
Combine
Gradually mix the wet ingredients into the dry ingredients until fully combined.
Bake
Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
Cool & Serve
Let the cake cool for at least 10 minutes before slicing. Garnish with extra lime zest and shredded coconut.
