Chicken Sausages with Zucchini, Tomatoes, and Pasta
Ingredients:
12 oz Italian Style Chicken Sausages, cut into discs
1 cup onion, diced
½ tsp salt
2 tsp garlic, minced
¼ tsp crushed red pepper (optional)
4 cups chicken broth
8 oz uncooked small Radiatore pasta (or any small pasta)
2 cups zucchini, chopped
2 tbsp lemon juice
¼ cup Parmesan cheese, grated, divided
1 cup grape tomatoes, halved
⅓ cup fresh basil, chopped
Directions:
Heat a large skillet over medium heat and add olive oil. Add the chicken sausages and diced onion, cooking until sausages are browned and onion is tender.
Season with salt, red pepper flakes, and garlic, cooking for about 1 minute until fragrant.
Pour in the chicken broth, scraping the bottom of the pan to release any browned bits. Bring to a boil, then add the uncooked pasta.
Stir frequently for about 10 minutes until pasta is mostly tender, then stir in chopped zucchini.
Cook for an additional 3 minutes, or until the zucchini is tender and most of the chicken broth is absorbed.
Stir in lemon juice, 3 tablespoons of Parmesan cheese, and halved grape tomatoes.
Remove from heat and top with fresh basil and remaining Parmesan cheese. Serve immediately.
