Ingredients:
2 lbs cooked, shredded chicken breast
1 tablespoon olive oil
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 medium onion, sliced
1 packet fajita seasoning mix (or homemade version)
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
1/2 cup sour cream (optional for added creaminess)
Fresh cilantro for garnish
Instructions:
Preheat the Oven:
Preheat to 375°F (190°C) and lightly grease a 9×13-inch casserole dish.
Cook the Veggies:
Heat olive oil in a skillet over medium heat. Sauté the sliced bell peppers and onion for 4-5 minutes until slightly softened but still crisp.
Combine the Filling:
In a large mixing bowl, combine the shredded chicken, sautéed veggies, and fajita seasoning. Mix until everything is evenly coated.
Assemble the Dish:
Spread the chicken and vegetable mixture evenly into the prepared casserole dish. Top with the shredded mozzarella and cheddar cheeses.
Bake:
Bake for 20-25 minutes, or until the cheese is melted and bubbly.
Serve:
Garnish with fresh cilantro before serving. Optional toppings include sour cream, salsa, or avocado slices for extra flavor.
Tips:
Save time by using store-bought rotisserie chicken.
Serve with warm tortillas, rice, or a fresh green salad to complete the meal.
Add jalapeños or black olives for an extra kick.
