Cabbage and Ground Beef

Ingredients:

1 medium head of cabbage, chopped
1 lb (450g) ground beef
1 medium onion, chopped
2-3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes (optional)
1/2 cup beef broth or water
2 tbsp olive oil or vegetable oil
1 tsp salt (or to taste)
1/2 tsp black pepper
1 tsp paprika (optional)
1/2 tsp dried thyme (optional)
1/2 tsp cumin (optional)
1/2 tsp red pepper flakes (optional, for a little spice)

Instructions:

Prepare the Cabbage: Remove the outer leaves of the cabbage, cut it in half, and remove the core. Slice the cabbage into thin strips or chop it into bite-sized pieces.

Cook the Ground Beef: Heat 1 tbsp of oil in a large skillet or Dutch oven over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Once cooked, drain any excess fat.

Cook the Vegetables: In the same pan, add the remaining tablespoon of oil. Add the chopped onions and garlic. Sauté until softened, about 3-4 minutes.

Combine Ingredients: Add the chopped cabbage to the pan with the onions and garlic. Stir to combine. Cook for a few minutes until the cabbage starts to wilt.

Add Tomatoes & Seasonings: Add the diced tomatoes (if using), beef broth or water, salt, pepper, paprika, thyme, cumin, and red pepper flakes (if using). Stir everything together.

Simmer: Cover the pan and reduce the heat to medium-low. Let it simmer for about 20-30 minutes, stirring occasionally, until the cabbage is tender and the flavors have melded together.

Adjust Seasoning: Taste the dish and adjust the seasoning with additional salt, pepper, or spices if needed.

Serve: Serve hot as a main dish or over rice, mashed potatoes, or even with crusty bread.
