Buckeye Bars

Ingredients:

For the Peanut Butter Layer:

1 cup creamy peanut butter

1/2 cup unsalted butter, softened

2 cups powdered sugar

1 teaspoon vanilla extract

For the Chocolate Topping:

1 1/2 cups semi-sweet chocolate chips

2 tablespoons unsalted butter

Directions:

Prepare the Pan:

Line an 8×8-inch baking dish with parchment paper, leaving an overhang for easy removal.

Make the Peanut Butter Layer:

In a large mixing bowl, beat the peanut butter and softened butter together until smooth and creamy. Mix in the vanilla extract. Gradually add the powdered sugar and beat until fully combined and smooth.

Assemble the Peanut Butter Layer:

Spread the peanut butter mixture evenly into the prepared baking dish. Smooth the top with a spatula. Place the pan in the refrigerator to chill for about 30 minutes.

Make the Chocolate Topping:

In a microwave-safe bowl, combine the chocolate chips and butter. Microwave in 20-second intervals, stirring after each, until fully melted and smooth.

Add the Chocolate Layer:

Pour the melted chocolate over the chilled peanut butter layer. Spread evenly to cover the surface.

Chill and Set:

Refrigerate the bars for at least 1 hour, or until the chocolate topping is firm.

Slice and Serve:

Remove the bars from the pan using the parchment overhang. Cut into squares or rectangles and serve chilled or at room temperature.
