Brunswick Stew

1 stick butter

2 large onions

1 Tablespoon Minced garlic

2 large cans diced tomatoes

1 bag frozen whole kernel corn

1 bag frozen baby lima beans

1 Tablespoon Worcestershire Sauce

1-cup BBQ sauce (I use sweet BBQ sauce because I like the sweetness with the smoky meat.)

2 boxes chicken broth

2 to 3 lbs of chopped meat (You can use a Boston Butt or pork loin.

1 lb shredded chicken breast.

I have used both depending on what I have.)

Sauté two large onion chopped in one stick of butter. Add minced garlic. Cook until onions are translucent. Add tomatoes including liquid in cans, corn, lima beans, Worcestershire sauce, BBQ sauce and chicken broth. Bring to a boil, stir well and turn to low. Add chopped meat and let simmer for a few hours. Add more chicken broth if it gets too thick. Serve with Mexican cornbread, regular cornbread, crackers, Fritos or whatever you prefer!

Tips – There are tons of recipes for Brunswick Stew. Find what you love and add more or less to make it how you love it. Some people like more tomatoes. Some people like more corn or lima beans. Some add diced chicken. This recipe is how we prefer it. But there are many variations.

Sometimes I add a shredded chicken breast .
