Banana Bread with Chocolate Chips

Ingredients:

1/2 cups ripe, mashed bananas (3-4 medium bananas)

1/2 cup packed light brown sugar

1/2 cup granulated sugar

1/2 cup unsalted butter, melted

2 large eggs

1 tsp vanilla extract

1/2 cup 2% Greek yogurt (or sour cream)

1 1/3 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

3/4 cup mini chocolate chips (+ extra for topping)

Directions:

Preheat your oven to 325°F (160°C) and grease a 9×5-inch loaf pan. Line with parchment paper for easy removal.

In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

In a large mixing bowl, combine melted butter, brown sugar, and granulated sugar until the mixture reaches a paste-like consistency.

Mix in the mashed bananas, followed by the eggs, Greek yogurt, and vanilla extract, stirring until well combined.

Gradually fold the dry ingredients into the wet ingredients until just incorporated. Gently fold in the chocolate chips.

Pour the batter into the prepared loaf pan and spread evenly. Sprinkle extra chocolate chips on top for garnish.

Bake for 60-75 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs.

Allow the banana bread to cool completely in the pan before slicing and serving.

Store at room temperature in an airtight container.
