Banana Bread Cookies
Ingredients
1 ripe banana, mashed
1/2 cup brown sugar
1/4 cup unsalted butter, melted
1 cup all-purpose flour
1/4 tsp baking powder
1/4 tsp cinnamon
1/4 tsp salt
1/2 tsp vanilla extract
1/4 cup chocolate chips (optional)
Directions
1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
2. In a large mixing bowl, combine the mashed banana, melted butter, and brown sugar until creamy and well-blended.
3. Stir in the vanilla extract and mix until incorporated.
4. Gradually add the flour, baking powder, cinnamon, and salt, stirring gently until a soft dough forms. If using, fold in the chocolate chips.
5. Using a tablespoon, scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
6. Bake in the preheated oven for 10-12 minutes or until the cookies are slightly golden on the edges.
7. Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
