Hamburger Noodle Soup

Ingredients:

cups egg noodles (or your favorite sturdy pasta)

1 tablespoon extra virgin olive oil

1 medium onion, diced

1 cup sliced celery

1 cup sliced carrots

2 cloves garlic, minced

1 pound lean ground beef

½ teaspoon oregano

½ teaspoon basil

½ teaspoon seasoned salt

Salt and pepper, to taste

1 envelope dry onion soup mix

3 cups beef broth

1 (28 oz) can diced tomatoes

1 (8 oz) can tomato sauce

1 tablespoon Worcestershire sauce (or soy sauce)

¼ cup grated Parmesan cheese

Directions:

Cook the egg noodles according to package instructions. Drain and set aside.

In the same pot, heat olive oil over medium heat. Add diced onion, sliced celery, and sliced carrots. Sauté for 4-5 minutes until softened.

Stir in minced garlic and ground beef. Cook until the beef is browned, then drain any excess fat.

Add oregano, basil, seasoned salt, and a pinch of salt and pepper. Stir in the dry onion soup mix, beef broth, diced tomatoes, tomato sauce, and Worcestershire sauce. Bring the mixture to a boil.

Reduce heat to low and let simmer for 15-20 minutes, stirring occasionally.

Mix in the cooked egg noodles and grated Parmesan cheese. Simmer for an additional 2-3 minutes.

Serve hot, garnished with extra Parmesan cheese if desired.
