Loaded Mashed Potato Meatloaf Casserole
Ingredients:
1 1/2 pounds ground beef (85/15)
1/4 yellow onion, finely chopped
2/3 cup seasoned dry breadcrumbs
1/3 cup whole milk
1 large egg, lightly beaten
1/2 teaspoon kosher salt
1/4 teaspoon coarse ground black pepper
2 pounds potatoes, peeled and cut into 1″ chunks
1/3 cup unsalted butter
1/2 cup whole milk
1 teaspoon kosher salt
1/4 teaspoon coarse ground black pepper
1 cup cheddar cheese, shredded
2 tablespoons fresh parsley, chopped (plus more for garnish)
Directions:
Preheat oven to 350°F (175°C).
In a large bowl, mix ground beef, chopped onion, breadcrumbs, 1/3 cup milk, beaten egg, kosher salt, and black pepper until well combined.
Evenly press the meatloaf mixture into the bottom of a 9×13-inch baking dish.
Bake for 25-30 minutes or until the meatloaf is fully cooked.
While the meatloaf bakes, boil the potato chunks in salted water until tender, about 15 minutes.
Drain the potatoes and mash them with butter, 1/2 cup milk, 1 teaspoon kosher salt, black pepper, and 2 tablespoons fresh parsley until creamy.
Remove the meatloaf from the oven and spread the mashed potatoes evenly over the top.
Sprinkle the shredded cheddar cheese over the mashed potatoes.
Return the dish to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Garnish with additional parsley and serve warm.
