INGREDIENTS:

  • 5-6 large apples (peeled and thinly sliced)
  • 1/2 cup pumpkin puree
  • 3 tbsp maple syrup
  • 2 tbsp brown sugar
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp cinnamon

Topping:

  • 1/2 cup rolled oats
  • 1/3 cup white whole wheat flour
  • 1/4 cup brown sugar
  • 1/2 cup chopped pecans (or walnuts/almonds)
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup cold butter, diced

INSTRUCTIONS:
1. Preheat your oven to 350°F (175°C). Lightly coat a large baking dish with cooking spray or a bit of butter.

2. In a large mixing bowl, prepare the filling by combining the sliced apples, pumpkin puree, maple syrup, brown sugar, vanilla extract, lemon juice, and spices. Once mixed, transfer this apple mixture into the prepared baking dish.

3. For the topping, in a separate bowl, mix together the rolled oats, white whole wheat flour, brown sugar, chopped pecans, pumpkin pie spice, cinnamon, and salt.

4. Add the diced cold butter to the oat mixture and use your hands to mix until the mixture becomes crumbly and well combined.

5. Evenly spread the crumble topping over the apple mixture in the baking dish.

6. Bake for approximately 35-40 minutes, or until the apples are bubbling and tender, and the topping is golden brown.

7. Serve warm, ideally with a scoop of your favorite vanilla yogurt or a dollop of Greek yogurt for a healthier twist! Enjoy!
