Crunchy Taco Cups
Ingredients:
1 lb lean ground beef, browned and drained
3 tablespoons taco seasoning
1 (10 oz) can Ro-Tel Diced Tomatoes and Green Chiles, drained
1 ½ cups sharp cheddar cheese, shredded (or Mexican blend)
24 wonton wrappers
Directions:
Preheat oven to 375°F (190°C) and generously coat a standard-sized muffin tin with nonstick cooking spray.
Combine cooked ground beef, taco seasoning, and drained tomatoes in a bowl, mixing well.
Line each muffin tin cup with a wonton wrapper.
Add 1 ½ tablespoons of taco mixture into each wonton cup and top with 1 tablespoon of shredded cheese.
Press down gently, add another wonton wrapper, more taco mixture, and finish with a layer of cheese.
Bake for 11-13 minutes, or until heated through and edges are golden brown.
Serve warm and enjoy!
