Pecan Pie Cobbler
Ingredients:
6 tablespoons unsalted butter, sliced into tablespoons
1 ¼ cups all-purpose flour
¾ cup granulated sugar
2 teaspoons baking powder
½ teaspoon salt
⅔ cup milk
1 teaspoon vanilla extract
2 cups chopped pecans
1 cup packed brown sugar
1 ½ cups boiling water
Directions:
Preheat oven to 350°F (175°C). Place sliced butter in a 9×13-inch baking dish and let it melt in the oven while preheating.
In a medium bowl, whisk together flour, granulated sugar, baking powder, and salt.
Add milk and vanilla extract to the dry ingredients, stirring until smooth.
Once the butter has melted, carefully remove the dish from the oven.
Pour the batter evenly over the melted butter in the baking dish without stirring.
Sprinkle chopped pecans evenly over the batter.
In a separate bowl, mix brown sugar and boiling water until sugar dissolves.
Carefully pour the brown sugar mixture over the pecans and batter, avoiding stirring.
Bake for 35-40 minutes or until the top is golden brown and the cobbler is set.
Let the cobbler cool slightly before serving.
