Cheesecake-Stuffed Chocolate Chip Cookies

Ingredients

1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup brown sugar, packed
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 large egg
1 cup semi-sweet chocolate chips
4 oz cream cheese, softened
1/4 cup powdered sugar
1/2 teaspoon vanilla extract

Directions
1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
2. In a mixing bowl, combine the flour, baking soda, and salt. Mix well and set aside for later use.
3. In another bowl, beat together the softened butter, brown sugar, and granulated sugar until the mixture is creamy and light.
4. Incorporate the egg and vanilla extract, mixing thoroughly until everything is well blended.
5. Slowly add the dry ingredients to the wet mixture, stirring gently until just combined, then carefully mix in the chocolate chips.
6. In a separate bowl, blend the softened cream cheese, powdered sugar, and vanilla extract until creamy and smooth.
7. Take a portion of cookie dough and press it flat in your palm. Add a dollop of the cheesecake mixture in the center, then fold the dough around it, sealing it completely.
8. Arrange the stuffed cookie dough balls on the prepared baking sheet, leaving space between each one to allow for spreading.
9. Bake in the preheated oven for about 10-12 minutes, or until the edges start to turn golden brown.
10. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to finish cooling.
