Cheesy Ground Beef and Rice Casserole

– 1 pound ground beef
– 1 cup uncooked white rice
– 2 cups beef broth
– 1 medium onion, chopped
– 1 can (10.5 oz) condensed cream of mushroom soup
– 2 cups shredded cheddar cheese
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1 cup frozen mixed vegetables (peas, carrots, corn)
– Fresh parsley, chopped (for garnish)

Directions
1. Begin by preheating your oven to 350°F (175°C).
2. In a large skillet, brown the ground beef over medium heat, breaking it up as it cooks, for about 5-7 minutes. Drain any excess grease from the skillet.
3. Add the chopped onion to the skillet with the beef, continuing to stir until the onion softens and turns translucent, about 3-4 minutes.
4. Season the mixture with garlic powder, onion powder, salt, and black pepper, ensuring that all the flavors meld together.
5. In a separate bowl, mix the uncooked rice, beef broth, cream of mushroom soup, and frozen mixed vegetables until well combined.
6. Fold the seasoned beef and onion mixture into the rice bowl, making sure everything is evenly incorporated.
7. Lightly grease a 9×13-inch baking dish and pour the beef-rice mixture into it, spreading it out evenly across the bottom.
8. Cover the dish tightly with aluminum foil to keep the moisture in, then place it in the oven to bake for 45 minutes.
9. After the initial baking time, remove the foil and sprinkle the shredded cheddar cheese over the top, baking for an additional 15 minutes or until the cheese has melted and is golden brown.
10. Allow the casserole to cool slightly before serving. Garnish each plate with freshly chopped parsley for a pop of color and freshness.
