No-Bake Banana Cinnamon Energy Bites

Ingredients:

1 ripe banana, mashed

1 cup rolled oats

1/4 cup almond butter (or peanut butter)

1 tablespoon honey or maple syrup

1 teaspoon ground cinnamon

1/4 teaspoon vanilla extract

Pinch of salt

1/4 cup mini chocolate chips (optional)

1/4 cup chia seeds or flaxseeds (optional)

Directions:

Mash the banana: In a medium bowl, mash the ripe banana with a fork until smooth.

Mix the ingredients: Add the oats, almond butter, honey, cinnamon, vanilla extract, and salt to the mashed banana. Stir well until all ingredients are combined. If you’re adding mini chocolate chips or chia seeds, mix those in as well.

Form the energy bites: Using your hands, scoop out small portions of the mixture and roll them into bite-sized balls (about 1 inch in diameter). If the mixture is too sticky, you can refrigerate it for 10-15 minutes before rolling.

Chill: Place the energy bites on a baking sheet or plate lined with parchment paper and refrigerate for at least 30 minutes to set.

Serve: Enjoy immediately or store them in an airtight container in the fridge for up to 1 week.
