Southern Fried Salmon Patties

Ingredients (Makes 4-6 patties)
1 (14.75 oz) can salmon, drained
1/4 cup cornmeal
1/4 cup flour
1 egg
3 tbsp mayonnaise
Oil for frying
Instructions
Step 1: Prepare the Salmon Mixture
Drain the canned salmon and place it in a mixing bowl. Flake it with a fork.
Add onion, cornmeal, flour, egg, and mayonnaise. Mix until well combined.
Step 2: Shape the Patties
Form the mixture into patties (about the size of a burger).
Step 3: Fry the Patties
Heat oil in a skillet over medium heat.
Cook the patties for 3-4 minutes per side, or until golden brown and crispy.
Step 4: Serve and Enjoy!
Drain on paper towels to remove excess oil.
Serve warm with your favorite sides or dipping sauce.

Use fresh or leftover cooked salmon instead of canned for a homemade twist.
