Pumpkin Spice Chia Oatmeal Cake

Ingredients
1 cup rolled oats
2 tbsp chia seeds
1/4 cup maple syrup (or honey)
1 tsp vanilla extract
1 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/2 tsp baking powder
2 large eggs
1/4 cup almond milk (or any milk)
1/4 tsp salt
Instructions
Preheat the Oven
Preheat your oven to 350°F (175°C) and grease or line an 8×8-inch (20×20 cm) baking pan with parchment paper.
Mix the Wet Ingredients
In a large bowl, whisk together the pumpkin puree, maple syrup (or honey), vanilla extract, and eggs until smooth and combined.
Stir in the almond milk and all the spices—cinnamon, ginger, nutmeg, and salt.
Combine the Dry Ingredients
In a separate bowl, combine the rolled oats, chia seeds, and baking powder.
Gradually fold the dry ingredients into the wet mixture, stirring until fully combined.
Bake
Pour the batter into the prepared baking pan, spreading it evenly.
Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
Cool and Serve
Let the cake cool completely in the pan before cutting into squares.
