Banana Walnut Bliss Cake

Ingredients:
– 1 cup chopped walnuts
– 2 ripe bananas, mashed
– 1 teaspoon vanilla extract
– 1 ½ cups all-purpose flour
– 1 cup granulated sugar
– 1 teaspoon baking soda
– ½ teaspoon salt
– ½ cup unsalted butter, softened
– 2 large eggs
– ½ cup sour cream or Greek yogurt

Instructions:
1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
3. Add in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
4. In another bowl, combine the mashed bananas, sour cream, and baking soda. Mix until smooth.
5. Gradually fold the banana mixture into the butter and sugar mixture.
6. In a separate bowl, whisk together the flour and salt. Gradually add the flour mixture to the banana batter, stirring until just combined.
7. Gently fold in the chopped walnuts.
8. Pour the batter into the prepared cake pan and smooth the top.
9. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
10. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
