Ingredients :

2 cups corn (fresh, frozen or canned, drained)

1/2 cup all-purpose flour

1/4 cup cornstarch

1 teaspoon of baking powder

1/2 teaspoon chili powder

1/2 teaspoon garlic powder

1/4 teaspoon smoked paprika

1/4 teaspoon salt

1/4 teaspoon black pepper

1/2 cup grated Cotija cheese

1/4 cup fresh cilantro, chopped

1 large egg

1/4 cup of milk

Vegetable oil for frying

Lime corner, to serve

Extra Cotija cheese for topping

Itinéraires :

1. In a large bowl, combine corn kernels, flour, cornstarch, baking powder, chili powder, garlic powder, smoked paprika, salt and pepper. Mix until dry ingredients are well distributed.

2. Stir in grated Cotija cheese, chopped cilantro, egg and milk. Mix until a thick dough forms.

3. Heat about 1 inch of vegetable oil in a deep frying pan or over medium heat.

4. Once the oil is hot (about 350 ° F or 175 ° C), carefully place the spoons of the dough into the oil, flattening them slightly with the back of the spoon.

5. Fry the donuts for 2-3 minutes on each side, or until golden brown and crispy. Remove oil and place on a towel-lined plate to drain excess.

6. Serve the donuts hot with lime wedges and a sprinkle of Cotija cheese on top. Enjoy your meal!
