Tomato Beef Noodle
Ingredients:
1 lb beef sirloin or flank steak, thinly sliced
2 tbsp soy sauce
2 tsp cornstarch
2 tbsp vegetable oil
3 cloves garlic, minced
1 medium onion, sliced
3 large tomatoes, diced
2 cups beef broth
2 tbsp tomato paste
2 tsp sugar
8 oz egg noodles or spaghetti
Fresh green onions for garnish
Salt and pepper to taste
Let’s Make It Happen:
Marinate the Beef:
Toss the thinly sliced beef with soy sauce, cornstarch, salt, and pepper. Let it marinate for 10 minutes.
Cook the Beef:
Heat vegetable oil in a large skillet or wok over medium-high heat. Sear the beef for 2-3 minutes until browned. Remove and set aside.
Build the Tomato Sauce:
In the same skillet, add garlic and onion; cook for 2 minutes. Stir in diced tomatoes, tomato paste, sugar, and beef broth. Simmer for 8-10 minutes until the tomatoes break down and the sauce thickens.
Cook the Noodles:
Meanwhile, boil the noodles according to package instructions. Drain and set aside.
Combine Everything:
Return the beef to the skillet and toss in the cooked noodles. Stir until everything is coated in the savory tomato sauce.
Garnish and Serve:
Top with chopped green onions and a sprinkle of black pepper.
Tips for Extra Magic:
Add a splash of soy sauce or chili oil for a richer flavor.
Toss in baby spinach or bok choy for a veggie boost.
For extra tang, add a squeeze of fresh lime juice before serving.
