Golden Baked Falafel

Ingredients:
– 2 cups chickpeas, soaked overnight
– 1/4 cup parsley, chopped
– 1/4 cup cilantro, chopped
– 1 onion, diced
– 3 garlic cloves, minced
– 1 tsp cumin
– 1/2 tsp coriander
– 1/4 cup flour
– Salt and pepper to taste
– Olive oil spray for baking

Instructions:
1. Preheat oven to 375°F (190°C). Blend chickpeas, parsley, cilantro, onion, garlic, cumin, and coriander in a food processor until coarse.

2. Add flour, salt, and pepper. Form into small patties or balls.

3. Arrange falafel on a baking sheet and spray lightly with olive oil.

4. Bake for 20-25 minutes, flipping halfway through, until golden. Serve with tahini or yogurt sauce.
