Ingredients
1 lb dried black-eyed peas (soaked)
4 bunches collard greens (trimmed and chopped)
2 lbs pork sausage links (cooked and sliced)
2 small cartons chicken stock
1 ½ tsp minced garlic
1 large can Rotel tomatoes
3 tbsp apple cider vinegar
1 tbsp tomato paste
1 tbsp sugar (optional, for balance)
1 ½ cups water (adjust as needed)
Salt and pepper to taste
Hot sauce (optional)
Directions
1. Prepare the Peas
Soak black-eyed peas for a few hours. Drain and rinse.
2. Cook the Sausage
Brown sausage in a skillet, slice, and set aside.
3. Assemble the Soup
In a crockpot, combine peas, sausage, collard greens, stock, garlic, tomatoes, vinegar, tomato paste, and sugar.
4. Add Water
Stir in water, adjusting as needed for desired consistency.
5. Season
Add salt, pepper, and optional hot sauce.
6. Cook Low and Slow
Set the crockpot to low and cook for 10+ hours. Stir occasionally.
7. Serve
Taste, adjust seasoning, and serve hot with cornbread for a traditional touch.
