Lemon Curd Cookies

Ingredients:
1 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup lemon curd
½ cup yellow frosting
2 tablespoons coarse sugar, for sprinkling
Directions:

Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
In a large bowl, cream together the butter and granulated sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Gradually blend the dry ingredients into the butter mixture until just combined.
Drop dough by tablespoonfuls onto the prepared baking sheets, spacing them about 2 inches apart.
Using the back of a spoon, create a small indentation in the center of each cookie and fill with a teaspoon of lemon curd.
Bake for 10-12 minutes, or until the edges are golden brown.
Allow cookies to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
Once cooled, drizzle yellow frosting over each cookie and sprinkle with coarse sugar for added texture and sparkle.
