Fried Rice
Ingredients:
3 cups cooked and cooled white rice (preferably day-old)
2 tablespoons vegetable oil
1 small onion, diced
2 cloves garlic, minced
1 cup frozen peas and carrots
2 large eggs, beaten
3 tablespoons soy sauce (adjust to taste)
1 tablespoon oyster sauce (optional)
1 teaspoon sesame oil
2 green onions, chopped
Salt and black pepper, to taste
Directions:
Prepare the Ingredients:
Have all the ingredients prepped and ready to go as this dish cooks quickly.
Cook the Aromatics:
Heat vegetable oil in a large skillet or wok over medium-high heat. Add diced onion and sauté for 2-3 minutes until softened. Add garlic and cook for another 30 seconds until fragrant.
Add the Vegetables:
Stir in the frozen peas and carrots. Cook for 2-3 minutes until heated through.
Scramble the Eggs:
Push the vegetables to one side of the skillet. Pour the beaten eggs into the empty side and scramble until fully cooked. Stir the scrambled eggs into the vegetables.
Add the Rice:
Add the cooled rice to the skillet, breaking up any clumps. Stir everything together and cook for 3-4 minutes, allowing the rice to heat through and pick up a light golden color.
Season the Rice:
Add soy sauce, oyster sauce (if using), and sesame oil. Toss until the rice is evenly coated and flavorful. Adjust seasoning with salt and pepper as needed.
Finish and Serve:
Stir in chopped green onions and serve hot.
