Air Fryer Cherry Cheesecake Egg Rolls

Ingredients:

For the Filling:

8 oz cream cheese, softened
1/4 cup granulated sugar
1 tsp vanilla extract (ensure it’s alcohol-free or optional)
1 cup cherry pie filling

For the Egg Rolls:

8 egg roll wrappers
1 egg, beaten (for sealing)
Powdered sugar (optional, for garnish)

Directions:

Prepare the Cheesecake Filling:
In a mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth.

Assemble the Egg Rolls:
Lay one egg roll wrapper on a clean surface with a corner facing you, like a diamond. Spread 2 tablespoons of the cheesecake mixture in the center of the wrapper. Add a spoonful of cherry pie filling on top of the cream cheese.

Fold the bottom corner over the filling, then fold in the sides. Roll the wrapper tightly around the filling, sealing the edge with a little beaten egg to prevent it from opening while cooking. Repeat with the remaining wrappers and filling.

Preheat the Air Fryer:
Preheat your air fryer to 375°F (190°C) for 3-5 minutes.

Cook the Egg Rolls:
Lightly spray the egg rolls with cooking spray or brush them with oil. Arrange them in a single layer in the air fryer basket, ensuring they don’t touch. Cook for 6-8 minutes, flipping halfway through, until golden brown and crispy.

Garnish and Serve:
Dust the egg rolls with powdered sugar and serve warm. These are perfect on their own or with a drizzle of chocolate or caramel sauce!
