Garlic Herb Lamb Chops with Roasted Potatoes

Ingredients:

For the Lamb Chops:

8 lamb chops

3 tablespoons olive oil

4 garlic cloves, minced

1 teaspoon dried rosemary

1 teaspoon dried thyme

1/2 teaspoon paprika

Salt and black pepper, to taste

For the Roasted Potatoes:

1 lb baby potatoes, halved

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon dried oregano

Salt and black pepper, to taste

Instructions:

Prepare the Lamb Chops:

In a small bowl, mix olive oil, minced garlic, rosemary, thyme, paprika, salt, and pepper. Rub this mixture evenly over the lamb chops and let them marinate for at least 30 minutes or overnight in the refrigerator.

Roast the Potatoes:

Preheat oven to 400°F (200°C).

Toss the halved baby potatoes with olive oil, garlic powder, smoked paprika, oregano, salt, and pepper. Spread them out on a baking sheet lined with foil.

Roast for 25-30 minutes, or until golden brown and tender, flipping halfway through cooking.

Cook the Lamb Chops:

Heat a skillet over medium-high heat. Sear the lamb chops for 3-4 minutes on each side until they develop a golden crust and reach your desired doneness (medium-rare: 145°F, medium: 160°F).

Serve:

Arrange the lamb chops and roasted potatoes in a serving dish. Garnish with fresh rosemary or parsley for an extra touch of flavor.
